Baby Steps
I don’t know much about blogging, so I’ma just babble for a bit.
Today I picked up some used half barrels for the purpose of force carbonating our session mead. This means we can soon begin another, larger batch of the raspberry session, Rubus Idaeus. Thus far it seems to be getting quite good reviews. Inevitably we’ll be able to carbonate within brite tanks, but our current tanks are not rated for pressure. They do, however, work remarkably well for clarification and aging. Bottling out of them is wonderfully simple and leaves not a drop in the tanks.
In other news, the Dry Elven Mead (sibling to the Sweet) has just been released, and once the next Sweet is bottled in a couple of weeks, we’ll be stretching our reach a bit more. Currently we are in four locations: Tofflers, Rusty Raven (Rubus only), Steve’s in Fitchburg (Sweet and Dry), and just this week the Verona Wine Cellar just accepted the Sweet and Dry.
Things are moving! I do, however, often feel anxious in that I’m not getting enough done (website, social media, future planning, etc.), or we need to get more production moving, or we’re moving too fast for what we have scheduled. It’s a bit neurotic, I know. But I also believe that it’s pretty normal to be concerned about the path one’s business is taking and any (and all) side tracks that occur.
That being said, the relatively slow pace we’ve developed has given us time to really monitor our production and flow of sales. Tracking production, sales and any state and federal topics takes time and organization. We’re learning a lot, all the time. It’s overwhelming, confusing, exciting, etc. Producing out of Mershon’s in Stoughton has allowed us to focus on product over government concerns, but we are taking notes and learning to dot i’s and cross t’s as we go. And items are getting checked off the “To Do” list. Not as many as are being added to it, but that’s normal, right? I’ve just updated the “Where to Buy” page and included a map. It needs a bit of tweaking, but it’s a good start. This blog will be published today, I will update the Facebook/Instagram pages, update “Our Meads” page with a new photo, and looking to get another batch started next week. So, things are moving, as I said. There will always be more to do than I/we can daily handle, but check something off the list, move on, get some sleep and try again tomorrow. That’s the current mantra.
